We are gluten and dairy-free, and I recently found a bread mix that my kids love on clearance for megamassive cheap. So, I bought, erm, a lot. It all expires in a few days.
My question is, can I freeze most of it and defrost as I need it? Ingredients are: White rice flour, tapioca starch, sugar, poly dextrose, dextrose, pea protein, sodium carboxy methylcellulose, salt, vitamin blend (thiamine, vitamin b2, niacin, folic acid, iron). The name of the mix is Tapioca Bread Mix, and it's made by Kinnikinnick.

There was a post here a couple days (weeks?) ago where someone asked about stocking a kitchen/pantry for the first time. It had a lot of great lists in it, and I meant to save it, but I didn't for some reason. I wanted to check what I have against the list.
I looked high and low and couldn't find it, so I'm not sure if it's deleted or if I'm just blind. Anyone know which post I mean?

I was up a bit later than usual last night, and around 2am when I wanted to get some sleep Peggy spotted a huge moth. She went crazy. I had to take photos of her because she was too funny!

At some point the moth hid somewhere, and Peggy,even though she usually sleeps on the sofa in the living room, wanted to sleep in my room. I woke up a couple of times during the night and when I opened my eyes I kept seeing this white silhouette on the chair, looking up. When I got up this morning she was still there, staring at the ceiling...
